Crispy Pork

📝 Ingredients
2kg pork belly piece
200g salt
1 egg white
You will also need a needle/meat tenderiser, roasting rack, parchment paper, and aluminium foil.
🧑🍳 Method
Day 1:
Remove all packaging from the pork belly and pat dry. Score the skin in a crosshatch pattern, careful not to cut into the meat.
Place the pork belly on a rack over a baking tray to allow air circulation.
Refrigerate uncovered for at least 24 hours, ideally 48. This drying process is crucial for achieving crispy skin!
Day 3:
Preheat your oven to 220°C (425°F).
Prepare the salt
Take the pork from the fridge and punch the skin with a needle or meat tenderiser.
Make the salt crust mixture by whisking egg white and salt until smooth.
Generously rub the salt mixture and any desired herbs and spices into the skin.
Place the pork belly in the preheated oven and roast for 30 minutes.
Reduce the oven temperature to 160°C (325°F) and continue roasting for another 1-2 hours, or until the internal temperature reaches 70°C (158°F) for medium-well.
To achieve the ✨ultimate✨ crispiness:
Increase the oven temperature to 220°C (425°F) for the final 15-20 minutes to crisp up the skin.
