How to Cook a Perfect Steak Every Time

There's something undeniably satisfying about a perfectly cooked steak: juicy, tender, and just melts in your mouth. But achieving steak perfection can be a daunting task. Fear not, steak lovers! 


With a few simple tips and tricks, you can master the art of steak cooking and impress your guests every time.


Choosing the Right Steak

The foundation of a great steak is the cut of meat. Here are some popular options:

  • Ribeye: Known for its marbling, resulting in a juicy and flavorful steak.

  • New York Strip: Leaner than ribeye but still tender, with a distinctly beefy flavour.

  • Filet Mignon: The most tender cut but also the leanest.

  • T-Bone: A combination of ribeye and filet, offering the best of both worlds.


 

Preparing the Steak

  1. Bring to room temperature: Remove the steak from the refrigerator about an hour before cooking. This ensures even cooking.

  2. Season generously: Salt and freshly ground black pepper are the classic choices. You can also experiment with other seasonings, such as garlic powder, onion powder, or smoked paprika.

  3. Let it rest: After cooking, allow the steak to rest for a few minutes before cutting. This allows the juices to be redistributed.

 

Cooking Methods

Pan-Seared Steak:

  • Heat a cast iron skillet over high heat.

  • Add oil: A high-smoke-point oil like canola or vegetable oil is best.

  • Sear the steak: Cook for 3-5 minutes per side for medium-rare, adjusting time according to your desired doneness.

  • Add butter and herbs: For extra flavor, add butter, garlic, and fresh herbs to the pan during the last minute of cooking.


Grill:

  • Preheat the grill to high heat.

  • Clean the grates: This prevents sticking and ensures even cooking.

  • Sear the steak: Grill for 4-6 minutes per side for medium-rare, adjusting time according to your desired doneness.

  • Rest: Allow the steak to rest for a few minutes before serving.


Oven:

  • Preheat the oven to 400°F (200°C).

  • Sear the steak: In a cast iron skillet, sear the steak on both sides for a few minutes.

  • Finish in the oven: Transfer the skillet to the oven and cook to your desired doneness.

 

Checking for Doneness

There are several methods to check for doneness:

  • Touch test: Gently press the steak with your finger. The firmer the steak, the more well-done it is.

  • Meat thermometer: Insert a meat thermometer into the thickest part of the steak. Here are general temperature guidelines:

    • Rare: 125°F (52°C)

    • Medium-rare: 135°F (57°C)

    • Medium: 145°F (63°C)

    • Well-done: 160°F (71°C)

 

Resting and Serving

Allowing the steak to rest for a few minutes before cutting is crucial. This redistributes the juices, resulting in a more tender and flavorful steak. Serve with your favourite sides, such as roasted potatoes, grilled asparagus, or a hearty salad.
